GARDEN GREENS WITH TURNED VINO AND CHOCOLATE DRESSING

Garden greens with turned vino and chocolate dressing:

Ingredients:

Dark chocolate (70%) – 90g

Balsamic vinegar – 3 tablespoons

Olive oil – 3 tablespoons

Oloroso lettuce – ½ a head

Iceberg lettuce -½ a head

Walnuts – 45g

Cranberries – 45g

Apples – 1

METHOD:

Dressing:

1. Chop the chocolate into small chunks
2. Melt the chocolate in a microwave. 10 – 15 seconds should do it.
3. Stir the melted chocolate to remove any lumps. Add the olive oil and stir till a homogenous mixture is formed.
4. Then add the balsamic vinegar and stir till the mixture is smooth. You could also use slightly oxidized wine (wine from a bottle that’s been open for a couple of days) instead.

Salad:

1. Roughly tear the lettuce leaves.
2. Slice the apple into thin slices (with skin).
3. Lightly roast the walnuts in an oven or in a pan.
4. In a platter or plate pile the lettuce leaves, then add the slices apples, walnuts and cranberries.
5. Drizzle half of the dressing over the salad. Serve the other half separately.
6. You could even mix all the components in a salad bowl and toss the salad.
7. Other things you could add and experiment with are cinnamon, ricotta cheese, pepper, French beans, peas and basil.
