Yes — BAR 46.5% works as a direct substitute in cakes, brownies, ganache, and mousse. For coating and moulding, couverture requires tempering, but BAR 46.5% comes pre-tempered for easier handling. You may notice a slightly different texture (smoother, more fluid when melted) — most bakers find this improves their final product.
For a bakery making 40–60 cakes/month, 10KG typically lasts 2–3 months. Store in a cool, dry place away from direct sunlight — ideally below 20°C and 55% humidity. Keep sealed and away from strong odours. Shelf life is 12 months from the date of manufacture.
During warmer months (April–October), chocolate may soften in transit. This does not affect the quality or taste. Simply refrigerate upon receipt, allow it to solidify, and use as normal. We ship with protective packaging to minimise heat exposure.
